Stella Blanca - Columbia Valley 2005

Aromas of tropical fruit, pear, fig and melon lead to a rich and soft palate, the wine finishes crisp and clean.

The growing season started cool, followed by 90+ degree days in July, these warm months contributed to the uniformity of berry maturation. In late summer temperatures dropped and cooled the vineyards, this allowed extra time on the vine to ripen and enhance flavor development. Moderate weather conditions during harvest contributed to mature fruit with intense flavors, good sugar development, and high natural acidity across varietals.

Yeasts specifically designed for white Bordeaux varietals were used to initiate the cold fermentation which lasted ten days in the barrel. The wine was aged sur lie in 100% French oak for two months to add complexity and depth to the wine. A touch of Muscadele was added for balance.
